::New York City::

We just got back from five fantastic days in New York City! This was my first time in the city, Teddy has been there a few times. The weather was perfect (70's and sunny) and we did literally everything, and then some. Great food, shopping in Chinatown (well...shopping in every town), going to the top of the Empire State Building, Ground Zero, Statue of Liberty, The Today Show, Central Park, Rockefeller Center, a service at Redeemer and almost a Yankee's Game. We walked pretty much the entire city! So much fun! It's always good to be home...and NYC sure makes Ft. Lauderdale feel like Paducah! ha! Speaking of, the third annual girls trip has officially been booked!
Just the three of us again, but we're taking it back to Mexico!

Family Camping Trip

This weekend we headed back up to Anastasia State Park in St. Augustine Florida to do a little family camping. Minus the downpour on Friday night, it was a ton of fun!

If you're in to camping, this is a great place to stay in North Florida!

a GREAT cookbook!

I recently picked up the Deen Boys' cookbook! "The Deen Bros. Y'all Come Eat" (I believe it's their second one, they do have two out). It is so good! I've only had 3 of the recipes so far, but I plan on trying them all! My favorite is the Ultra Creamy Mac & Cheese Casserole.
It is the best Mac & Cheese I have ever had!

Try it...

1/4 cup (1/2 stick) unsalted butter, cut into pieces & softened, plus additional for coating the dish
2 cups cooked elbow macaroni
8 ounces cheddar cheese, shredded (about 2 cups)
8 ounces american cheese, shredded (about 2 cups)
4 ounces of cream cheese, cubed
1 cup half-and-half
4 large eggs
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
Freshly ground black pepper

1. Preheat oven to 350. Butter a 13x9-inch baking dish, set aside.

2. In a large pot of water, cook the macaroni according to package directions; drain. Return the macaroni to the pot. Add the cheese to the hot macaroni and stir well. Spread in the prepared dish.

3. In a medium bowl, whisk together the 1/4 cup of butter, the half-and-half, eggs, sour cream, salt, cayenne pepper and black pepper. Pour over the macaroni. Bake uncovered for 40-45 minutes or until golden brown & bubbling. Let stand for 5 minutes before serving.

Clearwater Beach

This past weekend we headed over to Clearwater Beach for a Volleyball tournament! Great friends, beautiful weather and 9th out of 22 teams...what more could you ask for!? :)
